I am seriously slacking at this whole blogging thing, I have been having busy weeks and lovely weekends – this saturday we were out for a curry and on sunday I went to see the Suffragette film with my dancing buddy and then a trip to Pizza Hut afterwards to stuff our faces with cookie dough and then last night I went out for Tapas to catch up with my bestie – so I am having a good time. Just being too lazy to write anything down. I have lots of activities to write up and some cooking attempts. But then the telly calls.

So where to start: I recently made the kiddies some Apple Pie cupcakes that went down well.

I got the recipe from my Easy Cupcakes book, a past Christmas present from my mum that I am forever using.

For the cakes I beat the butter and sugar then egg together. Then I folded the flour, baking powder and mixed spice into the mixture and then lastly I folded in the chopped apple and orange juice.

For the topping I put the flour, mixed spice, butter and sugar into a bowl and rubbed together to make a breadcrumb-like mixture.

I then scooped the cake mixture into the cases and sprinkled the topping on it, I made a bit of a mess but who cares, and into the oven they went for 30 mins.

They came out nice and moist with a crispy crumbly topping. The scruffiness of the cake worked to my advantage this time, these aren’t supposed to look perfectly formed so it looked like I knew what I was doing.

And there we have a little after school snack for the children, that I could pretend were a bit healthy as they had fruit in them, result.
