So I have been creating a little, with a few disasters – a chocolate cake with raspberry cream cheese frosting tasted very odd. But these Chocolate Fudgy Cupcakes are goood.
These are chocolate fudgy because the mixture is much more moist and chocolatey than a plain chocolate sponge, plus I had some fudge bars in the cupboard – always got a variety of sweets in our cupboards – so thought why not incorporate them a bit.
So first to make the sponge mixture.
I melted 250g dark chocolate and 125g butter in a bowl over hot water, then let it cool. Then I mixed 95g self-raising flour, 135g caster sugar, 4 beaten eggs and the cooled chocolate mixture lightly for a few minutes until it was a smooth dark mixture. Then I poured them into some cases and put into the oven at 160ºC for about 30 minutes.
And there we have some very interesting looking sponges – promise they taste great. They will look like this:
Right next step was making the topping; I had some double cream in the fridge that needed using up so I made some frosting. I put 150g chopped up milk chocolate in a bowl, heated 200ml double cream in a saucepan until it boiled then poured it over the chocolate and stirred it until melted and smooth. I left it to cool for about 20 minutes, occasionally stirring it.
I then put 140g softened butter in a mixing bowl and gradually beat in 280g icing sugar until nice and smooth, then added the chocolate mixture until combined. Then I put it in the fridge for another 20 minutes to chill, once chilled I poured the mixture into a piping bag.
It was time to practice my terrible piping skills and I covered the cupcakes.
I then chopped up a couple of fudge bars and sprinkled them over the cupcakes.
And there we have it, some Chocolate Fudgy Cupcakes.
Simple and quick to make and they should please everybody.
