I have recently got the Hummingbird Bakery Home Sweet Home book out of the library and the very first recipe is Jaffa Cake Cupcakes, and who cares what other beautiful cakes were in the book, this one was a winner for me, I had to try and make them.
First I had to make some plain but tasty sponge cupcakes.
Then I scooped out a spoonful of the sponge from each cupcake.
I spooned some marmalade into the holes and then recovered with the pieces of sponge – I needed to make the sponge pieces smaller to fit back in the holes, so I had to eat them, shame.
Then I made a chocolate frosting to go on top of the cupcakes – a very nice chocolate frosting!
I then cut some jaffa cakes in half and placed them on top. And all done.
I would definitely make these again, the children loved them, well come on they are based on jaffa cakes!
