Yesterday I was visiting a friend so I had a great excuse to bake. I wanted to do something that looked good – which is something I seem to find tricky, and I do try so hard. Anyways out came my trusty Home Sweet Home cookbook by the Hummingbird Bakery cookbook and I thought I would attempt the Jolly Jammer Cupcakes.
First I made the biscuits for the decoration. These were nice and easy but would have been better if I had some small, pretty cookie cutters, instead I had to use a shot glass – always have one of those to hand – and a tiny lid.
I put them together with some creamy frosting and jam.
Then I made some vanilla cupcakes. Once they have cooled I cut out a hollow in the centre and piped a bit of jam and frosting into it, then I placed the sponge back.
Then I piped frosting on the top of the cupcake and placed the small jammy cookies on top.
My piping leaves alot to be desired but I think they look quite cute.
And they don’t taste too bad either. I think I preferred the cookies as the sponge was quite dense.
My friend did like them and I think I will keep them in mind for future visits to people as they look like I have made an effort 🙂
