This was my last attempt at making something with my leftover pumpkin; it has not been a successful ingredient for me the last couple of weeks, but at last I was on to a winner.
I got this recipe from over at The Novice Chef blog, and it was a nice and easy cake to make, just the kind of recipe I need.
For the cake, mix all the above ingredients together – I have just noticed there aren’t any eggs in my picture – you most definitely need eggs! – and bake, simple.
The cream cheese frosting – which I really liked – was nice and simple too, mix it all together till nice and creamy – the maple syrup and cinnamon gave it a lovely flavour.
And there I had a simple but yum cake, with pumpkin, yay! It is very similar to a carrot cake, I don’t know if you would be able to guess it was pumpkin in there and it isn’t the strongest of flavours, I think the frosting is what makes it taste so good but Biggy says there was a bit too much on there, and he says he has a sweet tooth, wimp.
If you look at the original one in The Novice Chefs blog theirs has a lovely orange colour to it, which I assume is because of the pumpkin puree. I just guessed the amount and boiled up some of the pumpkin then mashed it, I would assume that is how you make it into a puree… it seemed to work but wasn’t as vibrant.
Right that is it for you mr pumpkin, I surrender, you have won, until next year.
